Ham Glaze Recipe FAQs
What is Ham Glaze made of?
Ham glazes always have the same base ingredients: fat and sugar! The fat melts with heat and gives the sugar something to melt into, which then beautifully seeps into the meat and flavors it while leaving a bit of sugar on top to caramelize it into a crunchy, sticky coating.
Does ham need a glaze?
While ham can technically be cooked without using a glaze, you'd be shocked at the difference a glaze makes! Glazes coat the surface of the ham to lock in the moisture and infuse the meat with flavor. Without a glaze, ham runs the risk of being dry and bland.
Do you put ham glaze on before or after cooking?
Ham glaze should be applied in the last 30 minutes of cooking, as glazes are sugar-based, and heating them too much can cause the sugars to burn. For some recipes (like Instant Pot ham!), the cooking time is so short that the ham can be glazed immediately.
Ham Glaze Tips
- To add extra oomph to your favorite ham glaze, try changing up what liquid you pour into the bottom of the pan! My favorites are chicken broth and orange juice!
- Because they're made from melted butter, glazes thicken quickly. Make them right before you need them so they don't have time to cool down and harden.
- Different cuts of ham need to be glazed differently, too! For bone-in and boneless ham, make crisscrossing cuts across the top of the ham, then add the glaze- these lines help the glaze soak in. For spiral-cut, glaze the top of the ham and then between every slice.
- Once you're comfortable with the ratio of butter to sugar, try making your own glazes with your favorite flavors! Mustard, soy sauce and fruits of all sorts make fantastic flavorings, so have fun experimenting!
