Step-by-Step Instructions
- Preheat oven to 400°F.Add onion, bell pepper, uncooked rice, fajita seasoning, and cayenne (if using) to a 9×13-inch baking dish and stir to combine.
- In a separate bowl or measuring cup, whisk together the chicken broth, green chiles, tomato paste, and olive oil until well combined.
- Add the broth mixture to the baking dish and stir to combine with the rice mixture.
- Add shredded chicken, black beans, and corn to the baking dish. Give it an additional stir until well combined.
- Cover the baking dish with aluminum foil and then transfer to the oven to bake for 65-70 minutes or until all of the liquid is absorbed.
- Once complete, remove the baking dish from the oven, remove the aluminum foil, and sprinkle evenly with grated cheese. Return the baking dish to the oven for a final 5-10 minutes until the cheese has melted and is slightly golden.
- Remove from the oven, allow to cool for 5-10 minutes, and serve with a sprinkle of fresh cilantro, green onion, salsa, and avocado, if desired.

Tips for the Best Mexican Chicken Casserole
- The amount of time this chicken burrito casserole requires will depend on your oven. I put mine in the oven for 70 minutes using parboiled long-grain brown rice, and an additional 5 minutes after the cheese was added.
- If your casserole is still a bit soupy when you check on it, it most likely needs more time in the oven. Give it a quick stir to redistribute the liquid and place in the oven until the majority of the liquid has been absorbed. Keep in mind that some of the extra liquid will absorb into the rice as it sits as well.
- I like to use my homemade fajita seasoning for this recipe, but you can also use store-bought or sub in taco seasoning instead.
- If you don’t have cooked shredded chicken, you can use a rotisserie chicken or boil chicken breasts on the stove and shred or bake in the oven for 25 minutes. Once cooked, place chicken on a cutting board and use two forks to shred the chicken into bite-size pieces.

Ingredients
- 1/2 cup finely diced onion
- 1 red bell pepper diced

This may be a stupid question, but I’m not familiar with par-boiled rice. Can I just use regular uncooked long grain jasmine rice? Would I need to make any other adjustments so that it cooked fully? And if not, can I par-boil the rice myself?

Not a stupid question at all! You could certainly try it with long grain jasmine rice. Other readers have had success substituting the par-boiled rice for quinoa, farro and white rice, so I’m sure it would work out with the jasmine rice too. The most important thing is that you cook it long enough for the rice to absorb all of the liquid, so just keep an eye on it and you should be fine. Keep me posted on how it turns out with the jasmine rice!

I used quinoa in place of the rice, added extra veggies and a jalapeno, omitted the tomato paste, used rotel. I seasoned with salt, pepper, cumin, chili powder, garlic powder and onion powder in place of the fajita season pack. Omitted the cheese as well. I haven’t personally tried it in the crockpot, but I know some other readers tried it in the InstaPot and it worked out, so I’m sure you could make it work in the slow cooker too. You could maybe try putting it on low for 6-8 hours and see how it turns out. Then add the cheese at the end for a bit. Keep me posted if you decide to experiment!

This recipe was so delicious. The only hold up with the completed dish was the rice. There were casings on the cooked rice that added a tough unwanted texture to most bites. Would precooking the rice or rinsing it prior to cooking assist in preventing that result?

Could I leave the rice out my husband is not a fan? The rest of us love itso I would make rice and put the casserole ingredients on top after cooking. How would I have to change the recipe?

I’m sure you could make it work, but you’d have to significantly decrease the amount of broth since the rice won’t be in the pan to absorb it. I’d maybe try adding only 1/2 cup of broth just to prevent the chicken and beans from drying out? I haven’t tried cooking it without the rice, so I can’t say exactly. Please keep me posted it you decide to experiment!
