What are Chocolate Truffles?

Chocolate truffles are traditionally made with chocolate ganache. Chocolate ganache is made by pouring hot heavy whipping cream into chopped chocolate, letting the hot cream melt the chocolate, and then mixing it into a rich melted chocolate sauce. The creamy chocolate mixture is chilled, rolled into balls, and then rolled again in cocoa powder, nuts, cookies, coconut, etc. To make a vegan ganache use coconut milk instead of cream.

How Did We Lighten Up Our Dark Chocolate Truffles?

Simple Ingredients for the Best Chocolate Truffles

  • Chocolate chips or Chopped chocolate- at least 60% cocoa.
  • Fat-Free Greek yogurt - we swap the traditional ganache made with heavy cream normally used when making chocolate truffles, with Greek yogurt to lighten up the recipe and reduce the calories. We used plain Greek yogurt, but you may use vanilla Greek yogurt if you like your chocolate truffles sweeter. You can also use the full-fat version. Just take into consideration that the calories will change. Are you vegan? Use a dairy-free Greek-style yogurt.
  • Peanut Butter or almond butter - to add creaminess to the truffles, and because we love combining chocolate and nut butter!
  • Cocoa powder - to coat the truffles.

How to Make Dark Chocolate Truffles

Begin by melting the chocolate and pouring it into a bowl with the Greek yogurt and nut butter.

Whisk all the ingredients well and refrigerate until firm.

Using a 2-teaspoon ice cream scoop, form the truffles into balls and roll them in unsweetened cocoa powder. Place them on a parchment paper lined baking sheet and refrigerate until you are ready to serve them.

Tips and Tricks for Making Gourmet Dark Chocolate Truffles

  • Use High-Quality Chocolate. Our truffles are truly gourmet - the level of distinction you would find in a fine bakery or candy shop. Don't skimp on the chocolate because the better quality you purchase, the better your truffles will taste.
  • Chill your truffles for at least a couple of hours so that all of the ingredients can fully meld and deepen together.
  • Want a more stable truffle to leave out at room temperature? Dip your truffles in a chocolate that will harden on the outside.
  • Store extras in an airtight container in the refrigerator and keep them for up to one week or freeze them for up to three months.
  • These gorgeous ruffles make great gifts! Place them in a gifting container tied with a bow.

Variations for Vegan Chocolate Truffles

  • Add Sprinkles. If you are making these gorgeous truffles for a specific holiday or theme, you can dress them up with sprinkles for the occasion.
  • Add flavoring. A little peppermint, rum, bourbon, or caramel will change the flavor and provide variety.
  • Change up the coating. Besides cocoa powder, you may also coat them with roasted nuts such as crushed pecans, pistachios, coconut flakes, or sesame seeds.

Description

Make a batch of these dreamy, creamy skinny chocolate truffles. They will become your go-to 55 calorie guilt free treat. Trust us, try them and you will thank us later.

Ingredients

  • ½ cup good quality chocolate chips (at least 60 % cocoa)
  • 1 tbsp all natural almond butter, peanut butter or any other nut butter
  • ¼ cup fat free Greek yogurt or dairy free Greek yogurt
  • 1 tbsp unsweetened cocoa powder

Instructions

  1. Melt chocolate chips in the microwave (at 20 second intervals) or on a double boiler
  2. In a separate bowl, whisk together the Greek Yogurt and nut butter. Pour the melted chocolate and mix well. Refrigerate until it starts to harden
  3. Working with approximately 2 teaspoon tablespoon at a time (we used a small ice cream scoop), form truffles, roll them in unsweetened cocoa powder and refrigerate until ready to serve

    These are fabulous and so easy to make...I added a little variation to the recipe the balls were rolled in, some cinnamon, some nutmeg...and I used cacao powder, I also did a small batch that had maca mixed with the cacao intermixed (those were so frothy). The chocolate pieces that I used are carob,,so with this I added some rice syrup to make it a little sweeter. Yummy. I had been wondering what I could make all week with the carob pieces that I picked up from the store and this recipe came to me via spiritual experience's. Timing is everything in this Universe..I love you guys...thank you so much..much love peace and light..

      These freeze well and will stay fresh for about a month. Just make sure you use a good freezer bag. They'll stay fresh in the fridge for 4-5 days. Hope this helps!

    These are delicious and so easy to make! I eat a few everyday and I think they've actually gotten better with age (I'm talking 3 days old, nothing gross). They're not as sickeningly sweet as regularly truffles but sweet enough to hit the spot without feeling guilty. Love them!

      If you can't find Greek yogurt, something like fat free or light sour cream might work instead. Regular yogurt might be to liquid and migt prevent the truffles from forming properly. Hope this helps!

      The chocolate chips are sweetened, but if you want your truffles sweeter you can add sugar if you want. The calorie count will be higher.

    This recipe is definitely different from a traditional chocolate truffle, but it still tastes great. The yogurt gives a bit of a tart flavor, but when you eat it you can't taste it as much. I am personally not a fan of the tartness but I can still bear with it after I taste the smooth chocolate! Lovely and simple; perfect for when you're craving a sweet treat.

      And have made them multiple times now (with smooth peanut butter ).

      I really hate rolling things up with my hands so have been placing the cooled mix on some plastic wrap and rolling it into a sausage and leaving it wrapped like this for my own personal consumption when I need a wicked chocolate snack. Yum!

    Great recipe! Although i tried light vanilla greek yogurt and it really helped with the tartness that the plain greek yogurt seems to impart. Also, i am a big fan of dark chocolate but the cocoa powder coating was far too bitter. Thanks!

      Those are great variations. You can coat the truffles with sesame seeds, shredded coconut, or even a hot chocolate mix powder if you don't want to use unsweetened cocoa powder.

    I made that for my Diabetics in-law and he loved it!! I added half a banana in it to increase the sweetness. and I used nuts and coconut as toppings so that it is not as bitter as cocoa powder. I’ll definitely make it again. Big thanks!

      Yellow / green are very finely ground pistachios
