They can be fried in a frying pan in a little olive oil, but we enjoy them baked in the oven. While they are absolutely delicious fried, baking them offers a healthier alternative with an equally crispy texture.     Avoid using frozen shredded zucchini – the fritters will be so much easier to mix with fresh zucchini, and they won’t be so wet and soggy. Grate your own cheese.

  3. Mix the ingredients together.

    Add all the ingredients to a large bowl and mix well with a wooden spoon, spatula, or your hands until well blended. Because different sized eggs contain more or less moisture, feel free to add another small egg or another 1-2 tablespoons of breadcrumbs to achieve the correct texture (until the mixture sticks together, but isn’t too sticky or wet).
